Sawanoi Houjou Sanjugo(澤乃井芳醸参拾伍) from Ozawa Shuzo(小澤酒造) is a fine Japanese sake that represents the pinnacle of production from this historic brewery located in the picturesque Ome area of Tokyo. This sake is characterized by its “Junmai Daiginjo” brewing methodology, meaning it is made exclusively from rice, water and koji, with no distilled alcohol added, and that the rice has been polished to at least 50%, exposing the richest and purest core of the grain.
Houjou Sanjugo “芳醸参拾伍”, which translates to “thirty-five aromatic”, refers to the degree of polishing of the rice used, which is 35%, a further refinement compared to the traditional Junmai Daiginjo standards.
