Umenishiki Junmai Daiginjo (梅錦純米大吟醸) is a prestigious Japanese sake produced by the historic Umenishiki Yamakawa brewery, located in Ehime, a region renowned for producing high-quality sake. This sake represents the pinnacle of Umenishiki production, being a Junmai Daiginjo, the highest grade of sake, indicating that the rice has been polished to at least 50%, and that no additional alcohol has been used in its production.

The production process of this sake is extremely meticulous: the rice used is Yamada Nishiki, known as the “king of sake rice” for its ability to produce aromatic and complex sake. It is polished to 35%, exceeding the standard requirements for Junmai Daiginjo, to ensure maximum purity and refinement. After polishing, the rice is slowly fermented at low temperatures for several weeks, allowing the delicate and distinctive flavors and aromas to form.

Visually, the sake presents a crystalline clarity. On the nose it offers an aromatic bouquet with floral and fruity notes, with nuances of pear, melon and cherry blossom, which are typical of high-quality sake. On the palate, it stands out for its softness and complexity of flavors, with a long and refreshing finish that leaves a pleasantly clean and dry sensation.

The name “梅錦” (Umenishiki) means “plum brocade,” a tribute to the beauty of plum blossoms, a beloved theme in Japanese culture and often associated with poetry and art. This sake is ideal for enjoying on its own as an aperitif or paired with delicate foods such as sushi and sashimi, where its finesse can be fully appreciated.
