Bruno Paillard Première Cuvée Extra Brut is a distinctive and personal expression of the Champagne region, the result of a careful selection from over 30 crus of the region's noblest terroirs. This champagne is a blend of Pinot Noir (45%), Chardonnay (33%) and Pinot Meunier (22%), with part of the wine (20%) undergoing the first fermentation in barrique. The cuvée also includes reserve wines, combining vintages up to 1985, which can account for up to 50% of the final blend.

The aging of this cuvée is considerably extended, lasting three years on the lees and at least five months after dégorgement, with an extra-brut dosage (less than 6 grams of sugar per liter) which preserves the purity and authenticity of the wine. The complexity of champagne is revealed over time, offering the taster a journey through aromas of citrus and red fruits, with notes of almond, toast and black fruit such as cherries and figs, enriched by nuances of plum and pear on the palate.

This cuvée is ideal as an aperitif, but also pairs beautifully with cheeses such as Brie de Meaux, poultry and seafood dishes, using its liveliness and minerality to complement a wide range of flavours.

Bruno Paillard's dedication to quality is also reflected in the decision to indicate the date of dégorgement on each bottle, a practice he inaugurated in 1983 and which emphasizes the importance of this moment in the life cycle of champagne, offering greater transparency and appreciation for the maturation of the wine.
