The Ayala Champagne House was founded in 1860 by Edmond de Ayala and his wife. The members of the Ayala family have been passionately committed for generations to producing Champagne of great elegance, which are appreciated all over the world, especially in England, where Ayala was the official supplier of the royal family. In 2005, Maison Ayala was acquired by the family business Bollinger.

This example of Blanc de Blancs is produced exclusively in the best years with a rigorous selection of Chardonnay grapes from the Great and Premier Crus of the Côte des Blancs and the Montagne de Reims. The six-year maturation on the yeasts in the Ayala cellars gives this champagne a creamy structure and exceptional aromatic complexity, with a very low dosage which enhances its freshness and purity.

The aromatic profile opens with vivid notes of lemon, passion fruit and floral touches of jasmine and acacia honey, enriched with nuances of Timut pepper. On the palate, it is lively and balanced, with a pleasant density and flavors of citrus, passion fruit and mirabelle cake. The long and persistent finish is marked by a mineral limestone liveliness.

In 2024, aging has further enriched the flavor profile, leading to evolutions of ripe aromas of dried fruit, honey and brioche, maintaining a fresh minerality. Ideal as an aperitif or paired with refined dishes such as grilled lobster or truffle chicken, this champagne demonstrates how a Blanc de Blancs can evolve beautifully over time, offering a rich and satisfying tasting experience.
