Dewanoyuki Onikoroshi

Dewanoyuki Onikoroshi is a sake produced in the Yamagata region.
The name Onikoroshi literally means "demon slaying" and is used for particularly dry and sharp sake, so strong in character that they are considered capable of such a feat. Its decidedly dry character is achieved by combining two varieties of rice: Dewanosato and Dewakirari, both chosen to create a clean, dry, and short flavor.
This is a dry Junmai sake, characterized by umami notes and a rich flavor on the palate. It's called a "battle sake" for its quick finish that refreshes the palate, making it ideal with rich, fatty dishes. It's versatile in terms of serving temperature, ranging from 10°C to 55°C.
Thanks to its dry nature, it pairs perfectly with dishes such as fried meats, tofu, wagyu and ramen.
