The Jacquesson Cuvée n° 744 Extra Brut is a Champagne of great character and complexity, highlighting the excellence of the 2016 harvest, which constitutes the 70% of the blend. The 744 cuvée stands out for its aromatic notes of orange oil, crunchy white pulp fruit and a touch of Greek fennel, complemented by nuances of yellow Chartreuse. On the palate, it is full-bodied and velvety, maintaining a lively freshness thanks to live acids and a precise mousse. The final sensation is rich and satisfying, with a persistent saline note.

Unlike other cuvées in the 700 series, such as No. 743 based on the 2015 harvest, No. 744 reflects the generosity and concentration of the 2016, with a slightly higher proportion of grapes from the Aÿ, Dizy and Hautvillers areas. This gives the Champagne a more pronounced structure and complexity that evolves beautifully in the glass. The presence of grapes from Avize and Oiry adds elegance and finesse, creating an impeccable balance.

Over time, the initial fresh fruit notes can develop further complexity, moving towards more mature aromas of dried fruit, honey and toast. The initial nuances of orange oil and Greek fennel could evolve into more intense and layered scents.

The texture of the wine, originally velvety and lively, can become even softer and silkier. The pungent acidity typical of youth can soften, leading to a more harmonious balance between acidity and richness of flavors.

The persistent saline note that characterizes this cuvée could integrate better with the other gustatory elements, making the finish rounder and less sharp, but still distinctly mineral.

As it ages, the bubbles in a Champagne tend to become finer and more integrated, contributing to an overall creamier and less explosive mouthfeel.
