Kato Kichibee Shoten Born Tokusen Junmai Daiginjo Migaki 3Wari 8Bu

 130

Born's Junmai Daiginjo "Tokusen", produced by the historic Katoukichibee Shouten, represents a timeless classic among the sakes in their range. This particular sake is known to be one of the distillery's most prestigious, thanks to its long history of excellence and firsts in sake competitions.

This sake variation is brewed using exclusively Yamada Nishiki rice, grown in Hyogo Prefecture and polished to 38%. The unique fermentation process takes place in special tanks where the water circulates on three levels, allowing finer temperature control, similar to natural conditions. The result is a sake that matures at subzero temperatures for over two years, developing refined complexity and a slightly fruity aroma reminiscent of grapefruit.

Born Tokusen exhibits a rich and harmonious taste, with a slight astringency and bitterness that perfectly complements dishes during a meal, maintaining a pleasant freshness. It is ideal both as an aperitif and as an accompaniment to dishes rich in flavours, offering an excellent contrast thanks to its slightly bitter notes.

Incredibly versatile, this sake can be enjoyed both cold and at room temperature, or even slightly warmed to further enhance its aromatic nuances. This feature makes it an exception among Junmai Daiginjo, which are typically served cold. Trying it slightly warmed can reveal new dimensions of its flavor profile, making it a unique experience for any sake lover.
