The grapes are harvested by hand at the end of September. The bunches, after selection, are de-stemmed and softly pressed. The must obtained
it is decanted, without the addition of oenological additives, at a low temperature. Alcoholic fermentation takes place in small stainless steel tanks a
controlled temperature. After about 25 days, at the end of fermentation, the
wine is poured into another stainless steel tank, where it remains, like
foreseen by the production specification, six months.
At the end of this refinement, the Gavi docg Riserva is bottled and the refinement continues for another six months in the bottle before being placed on the market. This method of aging gives us a long-lived and pleasant wine
drink.

Excellent with all fish-based dishes, especially with crustaceans of which it enhances the particular flavor. Perfect with light first courses and risottos. It is recommended
pairing with fresh and semi-soft cheeses.
Serving temperature: between 10 and 12 degrees.
