The “Ronco delle Mele” Sauvignon 2021 by Venica & Venica is one of the most representative wines of the Venica family's production philosophy, being one of the most acclaimed and awarded whites in Italy. Originating from the Collio DOC, this Sauvignon Blanc is grown in a vineyard overlooking the Julian Alps, approximately 150 meters above sea level, a position that contributes greatly to its distinctive aromatic profile.

After the harvest, which takes place manually, the grapes are macerated for around 20 hours at controlled temperatures of 11-12°C. The winemaking process uses innovative methods to protect the must from oxygen, using the carbon dioxide produced by fermentation to reduce the use of antioxidants. Approximately 20% of the wine matures in large 20-27 hl wooden barrels, while the rest ages in stainless steel containers, thus combining tradition and modernity in the creation of a wine of extraordinary complexity and freshness.

Visually it presents itself with a bright yellow-green color. On the nose, elegant vegetal notes of tomato leaf, green pepper and grapefruit emerge, enriched by mineral nuances typical of the terroir. On the palate, the wine expresses remarkable elegance and aroma, with a freshness and flavor that blend perfectly, leading towards a long and engaging finish.

This Sauvignon is versatile and pairs beautifully with a variety of dishes, from seafood to fresh or lightly matured goat cheeses. It is excellent with risottos, asparagus dishes and even ethnic cuisine that incorporates citrus and herbaceous elements.

Serve at a temperature of 12-13°C. It has excellent aging potential, maintaining its liveliness and complexity for over 10 years.
